It will pull in a NON-realtime version of Linux, and LinuxCNC will no longer work. (It leaves your old kernel in the boot directory, so there is a way to get it back.)
Ubuntu 10.04 is not a bad system, I am only aware of one real rough spot. That has to do with X11 handling of odd screen dimensions, their video driver just can't handle some particular screens. But, there may be some very new hardware that needs newer drivers than are available on 10.04. On the other hand, I HATE the 12.04 Ubuntu Unity desktop system. It just didn't work the way I was used to. WAY too much Windows-like, you have to search for stuff all the time. There is a way to get the old Gnome desktop on 12.04, and I now have the procedure down pretty well. You have to edit a config file to expand the window borders so you can grab and expand them with the mouse. Otherwise, gnome-classic is just fine for me. In general, once you have the OS set up, you can load new versions of LinuxCNC quite easily when they come out, without reloading the whole OS.
