Try and find someone with a real scope so you can look at the signals.

I needed to capture RS232 signals and decode them for timing a few years back.  
 The UART module for my scope is $1200 and I didn't buy it at the time because 
I thought I'd never need it.  I have CAN bus and SPI/I2C and they are great.

But instead of spending $1200 I bought one of these.

If you can find the funds for something like this you won't be disappointed.  
With it I was able to discover the sender of the RS232 packets was breaking up 
the messages in half with a delay between that caused timeouts.  Long story 
short I haven't used it since because I have a really nice TEK scope but it 
solved a problem and I'd recommend it to anyone.

For example, it has a waveform generator.  You can simulate an encoder with it.
