Yes.

Inline-PGP and PGP/MIME messages run through different processing
pipelines in Enigmail.  For inline-PGP, once you click 'Send' Enigmail
will copy the text currently in your mail window, feed that through
GnuPG, and paste the output back into the mail window, then start the
normal Thunderbird email sending process.  This has the side effect of
giving a brief flash of encrypted text in the window before sending.

PGP/MIME handles things much differently.  The difference you're
interested in is, PGP/MIME processing doesn't paste anything back into
the window, thus you never see the encrypted text.

However, in both cases your message traffic is being encrypted.
Enigmail's PGP/MIME support is mature and well-tested.  Use it with
confidence.  :)
