You should have a "Mouse and Touchpad" utility.  In Fedora, it is on the 
"System Settings" panel which is on the "Applications/System Tools" 
menu.  Left-click the background image. The "System Settings" panel is a 
Gnomish thing.  I don't know if you have it in Ubuntu.

 > * get rid of the "dock"

If you mean the entire "shelf" and everything on it, right click it 
anywhere, select "Shelf" from the menu and then "Delete".  You can put 
any of the modules out on the desktop wherever you want them and make 
them whatever size you want.  Confining them to a shelf has advantages, 
however. It lets you control them all at once.  You can also have 
multiple shelves although configuring the contents is tricky in the 
current versions.
