The font/size for plain text messages is set in General Preferences on the
Font tab. That affects only what *you* see when you compose the message (or
view a plain text message that's been sent to you). What your recipient sees
is governed by the settings in their own email app.
If you switch an outgoing message to HTML, then you can select any font on
your Mac, and adjust the text size. As long as your recipients have the same
font installed, they'll see the same thing you do.
