I have just today released scripts that will import all his contacts into
Entourage preserving virtually all fields. It's Export / Import E-OL2K at

I'm working on scripts for import of the Calendar, too. Tasks import won't
really be possible because of a limitation in Entourage's current scripting
that doesn't enable scripting of the due date: I can't see much point ion
importing masses of tasks without their due dates, although I've done it for
individual tasks that way (you fill in the due date manually from a
transcribed text version of it).
For email, I believe that the solution is to temporarily get a free IMAP
account (they exist), copy all the Outlook message folders to the IMAP
server, then move them (or maybe their messages?) from the IMAP server to
local folders within Entourage. Then go back to using POP accounts if that's
what you have or prefer.
