To me, the best keyboard solution for this by far (under OS 9)
has always been "MagicBullets," an older extension that lets you munge text
in any number of ways simply by highlighting the text then hitting
shift-command-c, then pasting. That pasts your default text munging. By
pressing shift-command-' you get a dialog that lets you customize what you
want to do for that particular text. It also lets you assign "signature"
text to shift-command-v (granted, most people don't have as much use for
this feature today as they did a few years ago, since most email clients
provide multiple sigs).

Unfortunately, there is no OS X version :(   I paid the shareware fee for
MagicBullets several times, and I would pay $50 for a version for OS X, I
use it so much.
