To me, the best keyboard solution for this by far (under OS 9) has always been "MagicBullets," an older extension that lets you munge text in any number of ways simply by highlighting the text then hitting shift-command-c, then pasting. That pasts your default text munging. By pressing shift-command-' you get a dialog that lets you customize what you want to do for that particular text.
