You can't edit an address entered via "Use my address". I've already explained that you can either: 1) Change your default address so it includes everything you need. Using "Use my address" has the advantage that it's already there waiting for you. there's no way you can stack one address on top of another using that method, however. Or 2) If that's unsuitable for non-envelope purposes, make a new contact in the Address Book which has it how you want for envelopes. Then click the colorful Address Book icon and select the contact. You can also edit thus one. This is more steps each time of course. 3) Maybe someone has already, or might consider writing, a Word macro to do what you want, assuming you don't want to learn how to write Word macros.
