I have run into this several infrequent times also. However in my case I am still using OS 9.1 and Entourage 2001 and it not only hangs Entourage but also the whole computer requiring a forced restart.
I have not found anything obvious in the messages, but it must be something in the headers that does not show up with "show source". Anyway the way around it is to redirect the message to yourself. Entourage will send the message back to you with whatever was wrong cleaned up. I am guessing that with OS X, only the application Entourage crashes so your recovery time to get back where you can redirect the message is shorter. In all cases that I have seen, the message came from a PC using Outlook Exchange Server 5.5. However I also get hundreds of messages from this source that do not cause the print hang problem. In fact I can get two messages from the same person and one will hang and one will not. By hang, I mean that the first print set-up window will come up. Usually the window frame is there but the inside stays blank. A couple times the inside data was displayed before the hang. When the program freezes I can still use command-option-escape to bring up the force quit dialog box, but selecting quit causes the whole system to freeze for me and only a hard power switch reset will bring it back. Sorry I don't have any answers, but if your symptoms are similar to mine, it means the bug is still present in Entourage X. Maybe we can give enough clues here for the developers to track down the bugger.
