Remo,

This is the same configuration we run at my office.  The solution I used was
to upgrade to the latest version of CommunigatePro (4.0) which has the
ability to turn off the advertisement of the NTLM protocol (it's in the
"Obscure" section of the server settings).

But I agree that Entourage should try the other advertised authentication
methods before reverting to plain text.
