I don't see why you need OE any more. Yes, OE 5.02+ and Entourage 2001 both
used the MUD folder in the root Documents folder in OS 8/9 and Classic in OS
10.1.x. But if you were to start either one up in OS 10.2.x Classic, they
would make a new "Identities" or "Office 2001 Identities" folder
respectively in the other MUD folder in your OS X user sector, which is mow
the blessed Documents folder for Classic in Jaguar.

So anyone who does want to maintain E2001 or OE within Classic, and access
the same identities as when booted in OS 9, if they also have Entourage X,
should simply make an alias to the Identities (i.e. OE) and Office 2001
Identities folder(s) in the Jaguar user MUD folder. The one problem would be
with scripts: there is already a Entourage Script Menu Items folder in this
MUD folder (for OS X), and you can't put an alias of the same name in there
too. But you could put all the 2001 scripts which don't work in X into a
"Entourage 2001 Scripts" subfolder, and remove or change any keyboard
shortcuts that are the same as X scripts'.

It's not really worth all this bother. I'd suggest leaving either OE or
Office 2001 alone just in case you ever have to boot into OS 9, and leaving
the root MUD folder over there in case you need it then. You could get rid
of either OE 5 or Office 2001 though - you don't need both - and the elated
identities folder.

Are you very short of disk space?

PLEASE always state which version of Entourage you are using - 2001 or X.
It's often impossible to answer your questions otherwise.
