You'd have to go back to using HTML like you used to. Did you really not
know that plain text hard wraps text? It does so at the nearest word end to
76 characters. I guess you're probably replying to a plain text message with
your preferences set to reply in same format as original, which is usually a
good idea, since a lot of people who send you plain text will not want HTML
in return. But it means the text hard-wraps. Since that's what it's going to
look like at their end anyway, you get the benefit of seeing how it's going
to look.
