Entourage's "invitations" work reliably only with other Entourage users. All others will simply get an email with the details of the event. Making links clickable in plain text messages is a function of the receiving email software. If your PC receivers are using Microsoft Outlook this will work fine whether you include the URL in <> or not. Making links clickable in HTML messages involves using <a href...></a> tags in the source of the message, which is considered complex HTML which Entourage cannot compose.
