That doesn't make sense - a message is either HTML (even if its quoting some
earlier plain text) or it's plain text. It can't be both. If you Forward, it
all gets converted to plain text. If you reply, it will reply in the same
format as received if you have gar setting in Reply preferences.

Messages will always quote only the selection when replying (except in the
case of Complex HTML rendered by the IE HTML engine, where selection is
ignored). So if you want it to quote the whole reply, don't select anything.
The Reply preference setting "Quote entire message" only applies when you're
not selecting anything - it should say so, but doesn't. (If you turn that
off, again it quotes nothing only if nothing is selected.) It's standard on
the Mac email clients to quote only selection.

Finally, Entourage cuts off anything appearing below the  "--[space]"
signature separator line when you reply with insertion point below quoted
text (internet-type attribution lines).
