(using Ent. X)

A while ago, I wrote that when people replied to my emails, where I had put quotation marks came out strange. You wrote back and referred me to the Entourage Help page, which instructed me:

>From the Format menu, choose Character set; Western European (Windows).

That does work. However, it seems to be just for that email. Any way to make this the default for all outgoing emails?
