I just discovered Paul Berkowitz’s amazing “Complex HTML X 2.0.1 script, over at scriptbuilders.net. It works flawlessly for sending a html page. I feel like Amazon..com now.

Is there a way to send some normal text in the email body at the top –for instance, a greeting— along with the HTML file?  When I try adding a sentence or two in the email, and then running the script, the text doesn’t get sent.

No, the whole point is that it's handled by Internet Explorer, which doubles as Entourage's complex HTML engine, rather than by Entourage. You'll have to encode your text as HTML in the HTML document. You could try writing the text in another Entourage HTML message window, saving as draft, go to View/Source, and copy the relevant HTML code into your HTML page. Or do it in Word [or BBEdit], saving as Web Page, opening the web page in IE, go to View/Source, copy and paste the text into your other HTML file at the top, and save. Or use another HTML editor to do the same thing. You've got to get it into that HTML file.
