In every message window you're preparing to send, open on the screen as you
write, you can see a "From: " field at the top, with a popup next to it with
the name of the account it's going from. (If this is a new message, it will
have your default account; if it's a reply it will have the account to which
the original was sent, if you have your Reply preferences set accordingly.)

Just flip that popup to the name of your new account with the Return Receipt
headers. But don't expect to get a return receipt as a rule - most people's
email clients don't return one. It's the most useless option in all of
emailing, which is why Entourage doesn't bother with it. It's really just a
waste of time and effort - you can never be sure that someone hasn't
received the message when you don't get a receipt: in fact chances are
probably 95% or so that they have received it. And you'll probably get a
receipt less than about 25% of the time when it's actually received -
depending on what email client your correspondents used - your mileage may
vary.
