You're right, Entourage caches the mail after it has been downloaded. This
is simply the way Entourage works. If you want, you can control-click the
account and Empty Cache each time you quit to get rid of the cached copies.

There is a very good reason to keep cached copies, even if you don't work
offline. It prevents Entourage from having the re-download the same data
over and over again when you click a folder to view it's contents. This
makes performance much better and reduces network traffic.
