In addition to the rules and Applescript suggestions already made by others, if your intention is to actually "delete" messages from a folder after a certain time period, you can also do that easily with a Schedule (Entx->Tools->Schedules). For example, I have one for this list that runs every 10 days and deletes any messages in my EntourageTalk folder that are older than 30 days (I run similar for several mail folders, thereby automatically, regularly trimming my database). If you want to actually "save" the messages by moving them to another folder, you could also incorporate one of the suggested Applescripts into a Schedule, thereby moving old messages specified by age, from one folder to another, on an automatic, timed schedule.
