You're beginning to hit Entourage's Rules limitations. Grep is not included.
You can do
Match if ALL criteria are met:
Subject contains <name>
Subject is not <name>
However, you can't then add more criteria to match if ANY criteria are met.
In other words, you can't combine logical AND with logical OR in any complex
subsets or hierarchies. They're either a list of ORs (if ANY) or a list of
ANDs (if ALL). You have to make separate rules for the other options.
(Again, if all the rest of them are ORs you can keep them together in just
one more rule. Otherwise, every set of ANDs has to have its own rule.)
If it gets very complicated it might be easier to to it by running a script,
which can combine any network of AND and OR but is slower.
