Entourage is running very slowly. I want to rebuild the database but first have a question. As I recall in Ent. X, when you rebuilt, you lost all links between tasks and contacts. Does that happen with rebuild in 2004?
Yes, at least for the thorough "Rebuild" (formerly known as "Advanced Rebuild"). But rebuilding the database doesn't affect speed. You should delete, or archive and delete, huge mail folders like the Inbox to see if that's what's slowing you down. If that fixes it, there's no need to do anything else. If you really want to Compact the database (formerly known as "Typical Rebuild"). you can, and that won't lose links. But there's no need to so so.
Any your slowdown may have nothing to do with that. When does it occur? Running many scripts from rules and schedules, including SpamSieve, can stop everything else while they're running, when they do a lot of processing. Do you have scripts running from rules and/or schedules?

PLEASE always state which version of Microsoft Office you are using - **2004**, X or 2001. It's often impossible to answer your questions otherwise.
