If you can connect your mac to the exchange server, do so and set up an exchange account in entourage – all the data will be synced over.
If that’s not possible, get Paul B’s ‘import-export’ script suite from www.macscripters.net. This will move over everything but mail. He does give alternative instructions for moving the mail in the documentation.
