It's a known bug. (Well, known by me, anyway.) Since Exchange accounts
became non-IMAP in Entourage 2004 'default mail account' can't find an
Exchange account. I think that's something you'd have a good chance of
seeing fixed in the expected "Exchange" update.

What surprises me is that you didn't have a problem with it until now. Or
maybe I'm the one who's out-of-date - I don't have an exchange account to
test. Perhaps it got fixed in SP 1 and you've somehow "lost it"? That sounds
farfetched to me.
