Yes, you can.  I don’t know what the limit is, but I doubt you’ll reach it :-).

Also, if I put Message Body Contains : Professional Edition, will Entourage flag both emails that contain just one of those words? i.e., if a friend writes about the edition of his new book, will that get flagged?

I think so, but I’m not sure.  Try an experiment.  Set up the rule and then send yourself messages with the questionable words/phrases.  Only I can’t remember if the fact that *you* are the sender and your address is recognized will make a difference.  You’ll know soon enough.  Hopefully someone else will reply with a more efficient answer but this should get you started.  Also, you might want to check the Rules section of the Entourage Help Page:
