I'm contemplating buying a used 430EZ - tell me, when you set the
flash to M mode, does it reset every time it's switched off, or does
it remember? And does it remember if it does it's auto off function
(when still switched on but not in use for a minute)?

I don't like ANY preflash myself, so I'd want to stay in manual mode.
I assume manual mode means TTL all the time?

I used to use the 380EX with my old EOS 10 using TTL only, and was
very happy with the results. If it wasn't for the other features I'd
miss, I'd go with a 550EX flash on my older EOS cameras. I just might
do this anyway, since it seems likle A-TTL really sucks, and I lived
without the other features pretty well, and you never know one day I
might actually upgrade to a camera that can do E-TTL. Mind you, I
think even that would suck, as far as preflashes go.
