On your EOS 1v/3 the metering sensors are definitely in the pentaprism, behind the focusing screen. And changing the screen will almost certainly affect exposure. (CF0 exists to shift the exposure correctly for Canon's bright screens (like the EOS 3) vs. normal screens (like the EOS 1v)). How much it will affect exposure I can't even guess. Maybe the manufacturer has a guide? But your best bet would be to shoot some test shots, under controlled lighting conditions, and determine for yourself the amount of difference, then build this into your normal metering via exposure compensation.
