I try to use EPEL (or plain RHEL) chroot in mock, which used to work before.

FTR epel-8-x86_64 does not exists. It is symlink to something else:

On my system:

/etc/mock/epel-8-x86_64.cfg -> alma+epel-8-x86_64.cfg

And it works without problem. But it can be symlink to rocky+epel,...

Or it can be link to rhel+epel, if you want to consume real RHEL. Then you need to follow

https://rpm-software-management.github.io/mock/Feature-rhelchroots

Thanks, unfortunately I know all this.

My example showed the rhel-8-x86_64 chroot explicitly.

I followed the documentation long time ago and it worked up until now, where it stopped.

Now I get SSL certificate errors from subscription-manager.
