That's probably because you haven't installed epoptes-client in the LTSP chroot,
and at the same time your ltsp-client version is a bit old, it doesn't expose
the "LTSP_CLIENT_MAC" variable.
So while it's a valid bug, it can be easily fixed by following the installation
instructions:
