Alkis Georgopoulos proposed the following answer:
You probably configured correctly the server2 chroot,
but not the server2 root disk, /.

Either edit /etc/hosts in server2, or /etc/default/epoptes-client, so that the 
server DNS name or the $SERVER variable point to server1.
To verify that it's working correctly, open a gnome-terminal in a client booted 
from server2,
and manually run /usr/sbin/epoptes-client,
it should say
 * Epoptes-client connecting to server:789...
    ...done.
