You can edit /usr/share/epoptes-client/lock.svg with e.g. inkscape
and then to prevent epoptes-client updates from overwriting the image, you can
run
sudo dpkg-divert /usr/share/epoptes-client/lock.svg
Finally, from sch-scripts go to the publish disk image menu.
