Hi Ed,
Welcome to the group.

If I were that tall (I'm vertically challenged), I'd opt for no rudder 
pedals for the additional leg room, and guess that a bench seat could be cut 
down and temper foam or some such modern material used for comfortable seat 
cushion.

Leg & torso proportions will also play into the best configuration, 
particularly with the seat cushions.

I purchased my Ercoupe from a gentleman who is 6'4" and know there are 
others closer to you height who can add further.
