As far as I know, there are not any dissectors or tools that use "gtpv1" or "gtpv0"...

Checked in. It used to register dissectors named "gtpv0" and "gtpv1", and now registers one named "gtp"; do any other dissectors look for "gtpv0" or "gtpv1"? (None in the Ethereal distribution do.) If so, they'd need to be fixed. If not, it probably shouldn't register the dissector by name; it should just create an "anonymous" dissector handle.
