I would prefer to keep accent in all official document as much as possible.
The reason is simple: it is French !!
I agree that in the logo concept 2, the accent doesn't look good.
But I don't feel that is a strong reason to drop accent.
Typing accent is not hard now and most of program supports UTF-8 already.
And we don't have many official document yet. :)
Therefore, I feel tha the logo should follow the official name of
Étoilé, not the other way.
"Etoile" can be recongized by "Étoilé" project, but not the official name.
That's my own opinion.
