Well, that's why I didn't run setup.sh ... because I can't run it to setup the installation in a particular directory. This answer one of your questions. Well, first of all, I don't have a Library/Etoile directory on my system (neither in /opt/GNUstep/System, nor in ~/GNUstep) so I think that may be the cause of the problem I have. Isn't it created by setup.sh ?
