I havent done it, but multiple monitors under linux is one of its features. I belive there is a matrix card that does 4 monitors (and with the right software and hardware you can do upto 16 monitors.
A few years ago, when VA linux started supporting Mandrake and RasterMan (the guys that developed Enlightenment), One (or both) of them had some sweet screen shots of their desktops (which were humongus I think they used 2 or 3 displays).
