You also mentioned roof-rack cargo bars, and a rooftop solar cell array. I would be interested in the "pop-top" roof (by brand name/ manufacturer). How did you build the roof rack and solar cells to work together? I am hoping that you did not eliminate one option to permit the others.
Being in the USA (in the high deserts of the SouthWest USA), I expect that I would need variations in the electrical kit from your van. A five gallon tank of propane would handle my cooking, and even heating needs. In the past, I had a big Blazer with a pop-top camper and a forced-air propane furnace; I only used about one tank of propane (US$ 5.00) per month for both cooking and heat at night.
