Add the following section to the evolution\config.xmldb:
<section path="/Addressbook/Completion">
<entry name="uri" type="string" value="ldap://<exchange server>:389/c=Global%20Address%20List??sub"/>
</section>
Note the following:
1) The entry line above has been split across 2 lines by my emailer.
2) Put the name of your exchange client/ldap server where I have <exchange server>
This works fine for me.
