Well, I answered my own question (how do I insert old evolution files recovered from a dead system into a new install.)
It turns out that it's pretty simple, take the contents of the following folders and copy them across: .gconf/apps/evolution .evolution .beagle/Indexes/Evolution* (there are two folders that match this wildcard) and for the spam filtering: .spamassassin I also had to delete: .gconfd/saved_state because otherwise it didn't seem to notice new stuff. Finally, Evolution has a neat trick/nasty gotcha, depending on your perspective. Once you've started it in a login session, it never actually stops. This means that you must copy these files into place _before_ you start Evolution for the first time. Otherwise, it still believes what it knew before and it gets very confusing as nothing changes no matter what files you change! This, as you can probably guess, is what screwed me up so badly.
