Those above + git, gnome-common & gtk-doc-tools and all their dependencies equals approx 100 installed packages, phew! But after that compiling went fine. I didn't have to specify any EVOLUTION_DATA_SERVER_*-variables. Installing evolution-data-server-dev probably fixed that.
