I am running Ubuntu 16.04 and using evolution 3.20.5. You get this from the PPA at Gnome3 Staging: https://launchpad.net/~gnome3-team/+archive/ubuntu/gnome3-staging . Please make sure that you follow the instructions.

The only solution for you is migrating to another distro, or at least to run another distro as guest in a virtual machine. Somebody perhaps provides a PPA (third party repository) with a more recent version of Evolution for your Ubuntu release, but a beginner should be careful with using third party repos.
