It's the one that came with Debian 11 Stable. I didn't anywhere else
except for the upgrades.

OK. GIYF here. bwrap is "Bubblewrap" and is a container thing - are you
using a native Evolution or a containerised/flatpack version?
If I run evolution from the command line I get the following: bwrap:
Creating new namespace failed: No space left on device.
The ENOSPC error on that version of the kernel means:
ENOSPC (since Linux 4.9)
One of the values in the flags mask specified the creation of a
new user namespace, but doing so would have caused the limit de‐
fined by the corresponding file in /proc/sys/user to be ex‐
ceeded. For further details, see namespaces(7).
So what is the value of /proc/sys/user/max_user_namespaces or what is
the result of
sudo sysctl -a | grep max_user_namespaces
