thats not entirley true, you can setup 'outgoing' mail filters (go to
tools->mail filters and change the dropdown up the top), to move mail
around after its sent.

the filters have no notion of 'source folder' for a reply, although you
can probably filter on recipient, in most cases, to get the desired
result.
