Assuming your home directory will remain in the same location relative to '/', you can just tar up '~/evolution' (and for 1.3 or newer, '~/.gconf/apps/evolution') and copy them to the new machine.
If it will change, then you need to modify the filter and vfolder definitions, and perhaps a few other settings to the new path. Currently there is no explicit export tool for this purpose, although it might be a useful tool for someone to write.
