run gnome-font-properties (its in the user control panel if you have a gnome desktop)
The default is probably 'sans' or something (i use bitstream vera sans, finally a readable font other than 'fixed'). Actually, evolution should detect these broken messages and fix them transparently, from memory, so it could be another issue.
