You can change the default folders for Sent Messages and Drafts for any
account. They are not limited to the local folders, so you can set any
IMAP folder as Sent folder:
Tools / Settings / Mail Accounts / <account> Edit / Defaults
Have in mind though, that Evolution will fall back to the default
folders, if the IMAP server isn't available.
You probably want to have a look at the default folders, too:
Tools / Settings / Folder Settings / Default Folders
For a even more flexible setup and fine grained Sent folders you can
setup (outgoing) filters to move mails matching the filter to be stored
in any mail folder.
