How much RAM do you have? If you run top, you can see how much of your swap partitions are being used. If starting Evolution causes the value to go up, I'd say that the reason is probably the lack of memory. Running Evolution, Mozilla, and Nautilus together takes a lot of RAM. Right now, I'm showing 55mb of RAM for Evolution (I have big mailboxes), 10mb for Nautilus, 21mb for Mozilla, and 26mb for X -- and that's not counting the libraries that the applications are using, or the big mmaped devices that X is using. Eye candy is expensive. My machine ran pretty well with 256mb of ram, but I could bog it down if I tried. Now, I have 784mb and I've disabled my swap partitions!
