You might want to take a look at http://www.ime.usp.br/~rsilva/bogo-and-evo/ - that page shows how to do this using Evo and bogofilter; I've modified it to use Evo with spamprobe, and I suspect you could do the same for use with SA. It's a bit of a hack (you set aside two labels, one for spam, one for ham, and filter on those), but I've found it to work reasonably well for me.
