it sounds to me like your IMAP server is setup to move messages to its
own Trash folder when they get either marked for deletion or else
expunged (not clear which it is) from the original folder.

Since this is not part of the IMAP specification, I would have to say
"broken server" :-)

This is not something that Evolution is doing, it only knows about one
of the 2 trash folders.
