there are two ways of pgp-signing: one is inline (inside the message
text, it's the one you posted) and one is outline (an attached
signature, just like mine with this message).
while outline is supported by evolution, inline for some more or less
well-founded reasons not (inline cannot also sign the attachments of a
mail, there is no possibility to find out the correct charset of the
inline signature code etc).

this has been discussed a million times on this list, check out
