Sure -- or probably better: depends. ;-)
Red Carpet more or less is a graphical front-end for rpm. Thus you can
update Evolution just like any other package using Red Carpet.
However, any new package must be available through Red Carpet channels
for this to happen. Whether it is available depends on your
distribution.
If you don't see Evolution 2.0 you might want to check for new channels
or search existing channels. Given the large amount of distros out there
(even the limited amount of RC supported distros and versions) there is
no single channel that provides Evolution 2.0 for all of them.
Haven't used RC myself for a long time though, thus I can't be any more
specific... ;)
